What is Polyphony?

In the fingered mode and the full-fingered mode, your Yamaha keyboard recognizes any chord that you play and the accompaniment changes accordingly.

So which all chords does the keyboard recognize?

Almost all the chords! Yes, this should not be much of a concern since Yamaha keyboards nowadays support many more chords than what you would actually learn and use.
